- Egg yolks - 4 large
- Granulated sugar - 50 grams
- Marsala wine - 100 milliliters
- Vanilla extract - 1 teaspoon
- Fresh berries (strawberries, raspberries, or blueberries) - 100 grams
- Mint leaves - for garnish
Steps
- In a heatproof bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy.
- Add the Marsala wine and vanilla extract to the egg mixture and whisk to combine.
- Place the bowl over a pot of simmering water (double boiler method), making sure the bowl doesn't touch the water.
- Whisk continuously for about 8-10 minutes, until the mixture has doubled in volume and is fluffy and creamy.
- Remove from heat and let it cool slightly before serving.
- Serve the zabaglione warm or chilled in individual cups, topped with fresh berries and garnished with mint leaves.
