  • Eggplant - 1 small, sliced into 1 cm thick rounds
  • Mushrooms - 200 grams, cleaned and left whole
  • Red onion - 1 small, cut into wedges
  • Cherry tomatoes - 200 grams, halved
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Fresh basil - 5 leaves, chopped
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the sliced zucchini, bell pepper, eggplant, mushrooms, red onion, and cherry tomatoes.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and black pepper.
