- Eggplant - 100 grams, sliced
- Cherry tomatoes - 150 grams, halved
- Fresh basil - a handful, torn
- Mozzarella cheese - 150 grams, sliced
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your grill or grill pan over medium-high heat.
- In a bowl, toss the zucchini, bell pepper, eggplant, and cherry tomatoes with 1 tablespoon of olive oil, salt, and black pepper.
- Grill the vegetables for about 5-7 minutes or until they are tender and have nice grill marks, turning occasionally. Remove from heat and set aside.
- Roll out the pizza dough on a floured surface to your desired thickness, about 10 inches in diameter.
- Transfer the rolled-out dough to a pizza stone or a baking sheet lined with parchment paper.
- Drizzle the remaining tablespoon of olive oil over the dough and spread it evenly using a brush or your fingers.
- Layer the sliced mozzarella cheese evenly over the dough, followed by the grilled vegetables.
- Bake the pizza in a preheated oven at 220°C (428°F) for 12-15 minutes or until the crust is golden and the cheese is bubbling.
