Ingredients

  • Pizza dough - 250 grams
  • Olive oil - 2 tablespoons
  • Zucchini - 1 medium, sliced
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Eggplant - 100 grams, sliced
  • Cherry tomatoes - 150 grams, halved
  • Fresh basil - a handful, torn
  • Mozzarella cheese - 150 grams, sliced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a bowl, toss the zucchini, bell pepper, eggplant, and cherry tomatoes with 1 tablespoon of olive oil, salt, and black pepper.
  3. Grill the vegetables for about 5-7 minutes or until they are tender and have nice grill marks, turning occasionally. Remove from heat and set aside.
  4. Roll out the pizza dough on a floured surface to your desired thickness, about 10 inches in diameter.
  5. Transfer the rolled-out dough to a pizza stone or a baking sheet lined with parchment paper.
  6. Drizzle the remaining tablespoon of olive oil over the dough and spread it evenly using a brush or your fingers.
  7. Layer the sliced mozzarella cheese evenly over the dough, followed by the grilled vegetables.
  8. Bake the pizza in a preheated oven at 220°C (428°F) for 12-15 minutes or until the crust is golden and the cheese is bubbling.
  9. Remove the pizza from the oven and top it with fresh basil before slicing and serving.
