- Fresh spinach - 50 grams, chopped
- Cherry tomatoes - 100 grams, halved
- Fresh basil - 5 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 20 grams, grated (optional)
Steps
- In a bowl, whisk together the eggs and milk until well combined. Season with salt and black pepper to taste.
- In a non-stick skillet, heat the olive oil over medium heat. Add the chopped spinach and cook for about 2 minutes until wilted.
- Add the cherry tomatoes to the skillet and cook for another 2-3 minutes until they start to soften.
- Pour the egg mixture into the skillet and gently stir with a spatula, cooking slowly until the eggs are just set and creamy, about 4-5 minutes.
- Remove from heat and fold in the fresh basil. If desired, sprinkle with grated Parmesan cheese before serving.
- Serve immediately, garnished with extra basil if desired.
