Ingredients

  • Eggs - 4 large

  • Fresh spinach - 50 grams, chopped
  • Cherry tomatoes - 100 grams, halved
  • Fresh basil - 5 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 20 grams, grated (optional)

Steps

  1. In a bowl, whisk together the eggs and milk until well combined. Season with salt and black pepper to taste.
  2. In a non-stick skillet, heat the olive oil over medium heat. Add the chopped spinach and cook for about 2 minutes until wilted.
  3. Add the cherry tomatoes to the skillet and cook for another 2-3 minutes until they start to soften.
  4. Pour the egg mixture into the skillet and gently stir with a spatula, cooking slowly until the eggs are just set and creamy, about 4-5 minutes.
  5. Remove from heat and fold in the fresh basil. If desired, sprinkle with grated Parmesan cheese before serving.
  6. Serve immediately, garnished with extra basil if desired.
