Ingredients

  • olive oil - 2 tablespoons
  • garlic - 2 cloves, minced
  • red chili flakes - 1/2 teaspoon
  • canned crushed tomatoes - 400 grams
  • salt - to taste
  • black pepper - to taste
  • eggs - 4 large
  • fresh basil - 1/4 cup, chopped
  • parmesan cheese - 30 grams, grated
  • whole grain bread - 2 slices

Steps

  1. In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and red chili flakes, sautéing until fragrant, about 1 minute.
  2. Pour in the crushed tomatoes and season with salt and black pepper. Simmer for 10 minutes, allowing the sauce to thicken slightly.
  3. Using a spoon, create four small wells in the tomato sauce. Crack an egg into each well, being careful not to break the yolks.
  4. Cover the skillet and cook for about 5-7 minutes, or until the egg whites are set but the yolks remain runny.
  5. Once cooked, remove from heat and sprinkle with fresh basil and grated Parmesan cheese.
  6. Toast the whole grain bread slices and serve alongside the Uova in Purgatorio for dipping.
