Ingredients
- olive oil - 2 tablespoons
- garlic - 2 cloves, minced
- red chili flakes - 1/2 teaspoon
- canned crushed tomatoes - 400 grams
- salt - to taste
- black pepper - to taste
- eggs - 4 large
- fresh basil - 1/4 cup, chopped
- parmesan cheese - 30 grams, grated
- whole grain bread - 2 slices
Steps
- In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and red chili flakes, sautéing until fragrant, about 1 minute.
- Pour in the crushed tomatoes and season with salt and black pepper. Simmer for 10 minutes, allowing the sauce to thicken slightly.
- Using a spoon, create four small wells in the tomato sauce. Crack an egg into each well, being careful not to break the yolks.
- Cover the skillet and cook for about 5-7 minutes, or until the egg whites are set but the yolks remain runny.
- Once cooked, remove from heat and sprinkle with fresh basil and grated Parmesan cheese.
- Toast the whole grain bread slices and serve alongside the Uova in Purgatorio for dipping.
