Steps
- In a medium skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
- Stir in the halved cherry tomatoes, sliced olives, capers, and red pepper flakes (if using). Cook for about 5-7 minutes until the tomatoes start to soften.
- Using a spoon, create 4 small wells in the tomato mixture. Crack an egg into each well.
