  • Eggs - 4 large
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
  3. Stir in the halved cherry tomatoes, sliced olives, capers, and red pepper flakes (if using). Cook for about 5-7 minutes until the tomatoes start to soften.
  4. Using a spoon, create 4 small wells in the tomato mixture. Crack an egg into each well.
