  • Cherry tomatoes - 300 grams, halved
  • Tomato paste - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 4 large
  • Fresh basil - a handful, torn
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they start to soften.
  3. Stir in the tomato paste, dried oregano, salt, and black pepper. Cook for another 3-4 minutes until the sauce thickens slightly.
  4. Using a spoon, create small wells in the tomato sauce and gently crack an egg into each well.
  5. Cover the skillet with a lid and cook for about 5-7 minutes, or until the egg whites are set but the yolks remain runny.
  6. Remove the skillet from heat and sprinkle the torn fresh basil over the top. If desired, add grated Parmesan cheese.
  7. Serve immediately with crusty bread for dipping.
