- Tomato paste - 1 tablespoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Eggs - 4 large
- Fresh basil - a handful, torn
- Parmesan cheese - 30 grams, grated (optional)
Steps
- In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they start to soften.
- Stir in the tomato paste, dried oregano, salt, and black pepper. Cook for another 3-4 minutes until the sauce thickens slightly.
- Using a spoon, create small wells in the tomato sauce and gently crack an egg into each well.
- Cover the skillet with a lid and cook for about 5-7 minutes, or until the egg whites are set but the yolks remain runny.
- Remove the skillet from heat and sprinkle the torn fresh basil over the top. If desired, add grated Parmesan cheese.
- Serve immediately with crusty bread for dipping.
