  • Olive oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Onion, diced - 1 small (about 100g)
  • Chicken broth - 500ml
  • Parmesan cheese, grated - 30g
  • Black pepper - to taste
  • Salt - to taste
  • Red pepper flakes - a pinch (optional)

Steps

  1. Wash the Tuscan kale thoroughly, remove the stems, and chop the leaves into bite-sized pieces.

  4. Pour in the chicken broth and bring the mixture to a simmer.
  5. Once simmering, add the chopped Tuscan kale to the pot. Cook for about 10 minutes, or until the kale is tender.
  6. Season the soup with salt, black pepper, and red pepper flakes (if using) to taste.
  7. Ladle the soup into bowls, and top with grated Parmesan cheese before serving.
