  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Mushrooms - 150 grams, sliced
  • Cherry tomatoes - 200 grams, halved
  • Chicken broth - 250 ml, low-sodium
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the diced chicken thighs to the pot, season with salt and black pepper, and brown them for about 5-7 minutes.
  3. Stir in the diced red bell pepper, zucchini, and sliced mushrooms. Cook for another 5 minutes until the vegetables begin to soften.
  4. Add the halved cherry tomatoes, chicken broth, dried oregano, and dried thyme. Bring the mixture to a simmer.
  5. Cover the pot and let it simmer for 20 minutes, stirring occasionally, until the chicken is cooked through and the flavors meld together.
