- Cherry tomatoes - 200 grams, halved

- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon

Steps
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced chicken thighs to the pot, season with salt and black pepper, and brown them for about 5-7 minutes.
- Stir in the diced red bell pepper, zucchini, and sliced mushrooms. Cook for another 5 minutes until the vegetables begin to soften.
- Add the halved cherry tomatoes, chicken broth, dried oregano, and dried thyme. Bring the mixture to a simmer.
- Cover the pot and let it simmer for 20 minutes, stirring occasionally, until the chicken is cooked through and the flavors meld together.
