Ingredients

  • Chicken breast - 300 grams
  • Cherry tomatoes - 100 grams
  • Zucchini - 1 medium
  • Red bell pepper - 1 medium
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh rosemary - 1 teaspoon, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Cut the chicken breast into 2.5 cm cubes and place them in a bowl.
  2. In a separate bowl, mix olive oil, minced garlic, chopped rosemary, dried oregano, salt, black pepper, and lemon juice to create a marinade.
  3. Pour the marinade over the chicken cubes and let them marinate for at least 15 minutes.
  4. While the chicken is marinating, cut the zucchini and red bell pepper into 2.5 cm pieces.
  5. Preheat the grill or a grill pan over medium-high heat.
  6. Thread the marinated chicken, cherry tomatoes, zucchini, and red bell pepper onto skewers, alternating the ingredients.
  7. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  8. Remove the skewers from the grill and let them rest for a few minutes before serving.
