Ingredients

  • 2 Chicken breasts - 300 grams
  • 1 cup Cherry tomatoes - 150 grams
  • 2 cups Fresh spinach - 60 grams
  • 2 cloves Garlic - 6 grams
  • 1 tablespoon Olive oil - 15 ml
  • 1 teaspoon Dried basil - 1 gram
  • 1 teaspoon Dried oregano - 1 gram
  • Salt - to taste
  • Black pepper - to taste
  • 50 grams Parmesan cheese - grated

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and half of the dried basil and oregano.
  3. Add the chicken to the skillet and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
  5. Add the cherry tomatoes and cook for another 5 minutes, until they start to burst.
  6. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  7. Return the chicken to the skillet and sprinkle with remaining basil and oregano. Cook for an additional 2-3 minutes to combine flavors.
  8. Serve topped with grated Parmesan cheese.
