Ingredients
- Trofie pasta - 200 grams
- Fresh basil pesto - 100 grams
- Shrimp (peeled and deveined) - 200 grams
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cherry tomatoes - 100 grams, halved
- Parmesan cheese (shaved) - 30 grams
- Salt - to taste
- Black pepper - to taste
- Fresh basil leaves - for garnish
Steps
- Bring a large pot of salted water to a boil. Add the trofie pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque. Season with salt and black pepper to taste.
- Once the shrimp are cooked, add the halved cherry tomatoes and sauté for another 2 minutes until they soften slightly.
- Drain the trofie pasta, reserving a little pasta water. Add the pasta to the skillet with the shrimp and tomatoes.
- Stir in the basil pesto, mixing well to coat the pasta. If the sauce is too thick, add a splash of reserved pasta water to achieve the desired consistency.
- Remove from heat and serve immediately, garnished with shaved Parmesan cheese and fresh basil leaves.
