Ingredients

  • Sweet potatoes - 300 grams
  • Eggs - 3 large
  • Red onion - 50 grams, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Peel and grate the sweet potatoes into a large bowl.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped red onion until translucent, about 3-4 minutes.
  4. Add the sautéed onion to the grated sweet potatoes, followed by the eggs, chopped parsley, salt, and black pepper. Mix well until combined.
  5. In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
  6. Pour the sweet potato mixture into the skillet, spreading it evenly.
  7. Cook for about 5 minutes until the bottom is golden brown, then carefully flip the tortino using a plate to cook the other side, or transfer it to a baking dish.
  8. If using a baking dish, transfer it to the preheated oven and bake for 15-20 minutes until the center is set and the top is slightly golden.
  9. Remove from the oven, let it cool for a few minutes, then slice and serve warm.
