- Sweet potatoes - 300 grams
- Eggs - 3 large
- Red onion - 50 grams, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat your oven to 180°C (350°F).
- Peel and grate the sweet potatoes into a large bowl.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped red onion until translucent, about 3-4 minutes.
- Add the sautéed onion to the grated sweet potatoes, followed by the eggs, chopped parsley, salt, and black pepper. Mix well until combined.
- In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
- Pour the sweet potato mixture into the skillet, spreading it evenly.
- Cook for about 5 minutes until the bottom is golden brown, then carefully flip the tortino using a plate to cook the other side, or transfer it to a baking dish.
- If using a baking dish, transfer it to the preheated oven and bake for 15-20 minutes until the center is set and the top is slightly golden.
- Remove from the oven, let it cool for a few minutes, then slice and serve warm.
