- Eggs - 2 large
- Ricotta cheese (Paleo-friendly) - 100 grams
- Spinach - 50 grams, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cherry tomatoes - 200 grams, halved
- Fresh basil - 10 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a mixing bowl, combine almond flour and a pinch of salt. Create a well in the center and add the eggs. Mix until a dough forms, then knead for about 5 minutes until smooth.
- Wrap the dough in plastic wrap and let it rest for 20 minutes.
- In a separate bowl, mix ricotta cheese, chopped spinach, minced garlic, salt, and black pepper. Set aside.
- Roll out the rested dough on a lightly floured surface until thin (about 2mm). Cut into squares (approximately 5x5 cm).
- Place a small spoonful of the ricotta mixture in the center of each square. Fold the square into a triangle, sealing the edges tightly, then bring the two corners together to form a tortellini shape. Repeat until all dough and filling are used.
- In a large skillet, heat olive oil over medium heat. Add halved cherry tomatoes and sauté for 5 minutes until softened.
- Add the tortellini to the skillet and pour in enough water to cover them halfway. Cook for about 10-12 minutes until the tortellini float and are cooked through.
- Stir in chopped basil and season with additional salt and pepper if desired. Serve hot.
