Ingredients

  • Almond flour - 200 grams
  • Eggs - 2 large
  • Ricotta cheese (Paleo-friendly) - 100 grams
  • Spinach - 50 grams, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - 10 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a mixing bowl, combine almond flour and a pinch of salt. Create a well in the center and add the eggs. Mix until a dough forms, then knead for about 5 minutes until smooth.
  2. Wrap the dough in plastic wrap and let it rest for 20 minutes.
  3. In a separate bowl, mix ricotta cheese, chopped spinach, minced garlic, salt, and black pepper. Set aside.
  4. Roll out the rested dough on a lightly floured surface until thin (about 2mm). Cut into squares (approximately 5x5 cm).
  5. Place a small spoonful of the ricotta mixture in the center of each square. Fold the square into a triangle, sealing the edges tightly, then bring the two corners together to form a tortellini shape. Repeat until all dough and filling are used.
  6. In a large skillet, heat olive oil over medium heat. Add halved cherry tomatoes and sauté for 5 minutes until softened.
  7. Add the tortellini to the skillet and pour in enough water to cover them halfway. Cook for about 10-12 minutes until the tortellini float and are cooked through.
  8. Stir in chopped basil and season with additional salt and pepper if desired. Serve hot.
