  • Spinach - 100 grams, fresh
  • Vegetable broth - 600 ml
  • Olive oil - 1 tablespoon
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  2. Add the diced onion, carrot, and celery. Sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and diced zucchini, cooking for another 2 minutes.
  4. Pour in the vegetable broth and bring to a simmer. Season with salt and black pepper to taste.
  5. Once simmering, add the tortellini to the pot. Cook according to package instructions, usually about 4-5 minutes.
  6. In the last minute of cooking, add the fresh spinach and chopped parsley to the pot.
  7. Remove from heat and adjust seasoning if necessary before serving.
