- Vegetable broth - 600 ml
- Olive oil - 1 tablespoon
- Fresh parsley - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onion, carrot, and celery. Sauté for about 5 minutes until softened.
- Stir in the minced garlic and diced zucchini, cooking for another 2 minutes.
- Pour in the vegetable broth and bring to a simmer. Season with salt and black pepper to taste.
- Once simmering, add the tortellini to the pot. Cook according to package instructions, usually about 4-5 minutes.
- In the last minute of cooking, add the fresh spinach and chopped parsley to the pot.
