Ingredients
- All-purpose flour - 200 grams
- Water - 100 milliliters
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Spinach - 100 grams, chopped
- Mushrooms - 100 grams, diced
- Zucchini - 100 grams, grated
- Carrot - 50 grams, grated
- Nutritional yeast - 2 tablespoons
- Garlic - 2 cloves, minced
- Tomato sauce - 300 milliliters
- Vegan cheese - 50 grams, shredded
- Italian seasoning - 1 teaspoon
- Black pepper - to taste
Steps
- In a large bowl, combine the flour and salt. Gradually add the water and olive oil, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- In a skillet over medium heat, add a splash of olive oil and sauté the garlic until fragrant. Add the mushrooms, zucchini, carrot, and spinach, cooking until softened, about 5-7 minutes. Stir in nutritional yeast, Italian seasoning, and black pepper. Remove from heat and let cool.
- Roll out the rested dough on a floured surface until thin. Cut into squares (approximately 7 cm x 7 cm). Place a teaspoon of the vegetable filling in the center of each square and fold diagonally to form a triangle. Pinch the edges to seal and shape the ends into a tortellini.
- Preheat the oven to 180°C (350°F). Spread half of the tomato sauce in the bottom of a baking dish. Arrange the tortellini on top and cover with the remaining tomato sauce. Sprinkle the vegan cheese over the top.
- Bake in the preheated oven for 25-30 minutes until heated through and the cheese is melted. Serve hot.
