Ingredients

  • Whole wheat tortellini - 200 grams
  • Fresh spinach - 150 grams
  • Canned diced tomatoes - 400 grams
  • Low-fat mozzarella cheese - 100 grams, shredded
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Grated Parmesan cheese - 30 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, bring water to a boil and cook the whole wheat tortellini according to package instructions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  4. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Stir in the canned diced tomatoes, dried oregano, salt, and black pepper. Let the mixture simmer for 5 minutes.
  6. Combine the cooked tortellini with the tomato-spinach sauce in the skillet, mixing well to coat the pasta.
  7. Transfer the tortellini mixture to a baking dish and sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.
  8. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for a few minutes before serving.
