- Fresh spinach - 150 grams
- Canned diced tomatoes - 400 grams
- Low-fat mozzarella cheese - 100 grams, shredded
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Grated Parmesan cheese - 30 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a large pot, bring water to a boil and cook the whole wheat tortellini according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Stir in the canned diced tomatoes, dried oregano, salt, and black pepper. Let the mixture simmer for 5 minutes.
- Combine the cooked tortellini with the tomato-spinach sauce in the skillet, mixing well to coat the pasta.
- Transfer the tortellini mixture to a baking dish and sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
