- Potatoes - 250 grams
- All-purpose flour - 150 grams
- Egg - 1 large
- Ricotta cheese - 100 grams
- Parmesan cheese, grated - 50 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Fresh basil leaves - a handful (for garnish)
Steps
- Boil the potatoes in salted water until tender, about 20 minutes. Drain and let cool slightly.
- Peel the potatoes and mash them in a bowl until smooth. Allow to cool completely.
- In a mixing bowl, combine the cooled mashed potatoes, ricotta cheese, grated Parmesan, salt, and black pepper. Mix until well combined.
- On a clean surface, make a mound with the flour and create a well in the center. Add the egg into the well.
- Gradually incorporate the flour into the egg until a soft dough forms. Knead the dough for about 5 minutes until smooth and elastic.
- Roll the dough out into a thin sheet (about 2-3 mm thick). Cut into 10 cm circles using a cookie cutter or a glass.
- Place a small spoonful of the potato filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges for extra sealing.
- Bring a large pot of salted water to a boil. Carefully add the tortelli and cook for about 3-4 minutes until they float to the surface.
- In a skillet, heat the olive oil over medium heat. Once the tortelli are cooked, transfer them to the skillet and sauté for 2 minutes until slightly golden.
- Serve hot, garnished with fresh basil leaves.
