Ingredients

  • Potatoes - 250 grams
  • All-purpose flour - 150 grams
  • Egg - 1 large
  • Ricotta cheese - 100 grams
  • Parmesan cheese, grated - 50 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh basil leaves - a handful (for garnish)

Steps

  1. Boil the potatoes in salted water until tender, about 20 minutes. Drain and let cool slightly.
  2. Peel the potatoes and mash them in a bowl until smooth. Allow to cool completely.
  3. In a mixing bowl, combine the cooled mashed potatoes, ricotta cheese, grated Parmesan, salt, and black pepper. Mix until well combined.
  4. On a clean surface, make a mound with the flour and create a well in the center. Add the egg into the well.
  5. Gradually incorporate the flour into the egg until a soft dough forms. Knead the dough for about 5 minutes until smooth and elastic.
  6. Roll the dough out into a thin sheet (about 2-3 mm thick). Cut into 10 cm circles using a cookie cutter or a glass.
  7. Place a small spoonful of the potato filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges for extra sealing.
  8. Bring a large pot of salted water to a boil. Carefully add the tortelli and cook for about 3-4 minutes until they float to the surface.
  9. In a skillet, heat the olive oil over medium heat. Once the tortelli are cooked, transfer them to the skillet and sauté for 2 minutes until slightly golden.
  10. Serve hot, garnished with fresh basil leaves.
