- Whole wheat pastry dough - 200 grams
- Fresh spinach - 200 grams
- Ricotta cheese - 150 grams
- Feta cheese - 100 grams, crumbled
- Eggs - 2 large
- Parmesan cheese - 30 grams, grated
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- In a pan, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
- Add fresh spinach to the pan and cook until wilted, about 3-4 minutes. Remove from heat and let cool.
- In a mixing bowl, combine ricotta cheese, crumbled feta cheese, grated Parmesan cheese, eggs, salt, black pepper, and nutmeg. Mix well until combined.
- Stir the cooled spinach into the cheese mixture until evenly distributed.
- Roll out the whole wheat pastry dough on a floured surface to fit a 20 cm (8 inch) tart pan. Gently press the dough into the pan and trim any excess.
- Pour the spinach and cheese mixture into the prepared crust, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the filling is set and the crust is lightly golden.
- Remove from the oven and let cool for 5 minutes before slicing and serving.
