Ingredients

  • Whole wheat pastry dough - 200 grams
  • Fresh spinach - 200 grams
  • Ricotta cheese - 150 grams
  • Feta cheese - 100 grams, crumbled
  • Eggs - 2 large
  • Parmesan cheese - 30 grams, grated
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
  3. Add fresh spinach to the pan and cook until wilted, about 3-4 minutes. Remove from heat and let cool.
  4. In a mixing bowl, combine ricotta cheese, crumbled feta cheese, grated Parmesan cheese, eggs, salt, black pepper, and nutmeg. Mix well until combined.
  5. Stir the cooled spinach into the cheese mixture until evenly distributed.
  6. Roll out the whole wheat pastry dough on a floured surface to fit a 20 cm (8 inch) tart pan. Gently press the dough into the pan and trim any excess.
  7. Pour the spinach and cheese mixture into the prepared crust, spreading it evenly.
  8. Bake in the preheated oven for 25-30 minutes, or until the filling is set and the crust is lightly golden.
  9. Remove from the oven and let cool for 5 minutes before slicing and serving.
