Steps
- Preheat the oven to 180°C (350°F).
- In a medium bowl, mix the whole wheat flour, almond flour, and softened butter until crumbly.
- Add honey and the egg into the flour mixture and knead until a smooth dough forms.
- Wrap the dough in plastic wrap and chill in the refrigerator for 20 minutes.
- While the dough chills, prepare the custard filling by whisking together the milk, cornstarch, vanilla extract, lemon zest, and a pinch of salt in a saucepan over medium heat.
- Continue to stir until the mixture thickens, then remove from heat and let it cool slightly.
- Roll out the chilled dough on a floured surface and transfer it to a tart pan, pressing it into the bottom and up the sides.
- Pour the custard mixture into the prepared crust and smooth the top.
- Sprinkle pine nuts over the custard filling.
- Bake in the preheated oven for 25-30 minutes until the crust is golden and the custard is set.
