  • Honey - 30g
  • Egg - 1 large
  • Milk - 150ml (low-fat)
  • Vanilla extract - 1 tsp
  • Cornstarch - 20g
  • Lemon zest - 1 tsp
  • Pine nuts - 20g (for topping)
  • Powdered sugar - for dusting (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium bowl, mix the whole wheat flour, almond flour, and softened butter until crumbly.
  3. Add honey and the egg into the flour mixture and knead until a smooth dough forms.
  4. Wrap the dough in plastic wrap and chill in the refrigerator for 20 minutes.
  5. While the dough chills, prepare the custard filling by whisking together the milk, cornstarch, vanilla extract, lemon zest, and a pinch of salt in a saucepan over medium heat.
  6. Continue to stir until the mixture thickens, then remove from heat and let it cool slightly.
  7. Roll out the chilled dough on a floured surface and transfer it to a tart pan, pressing it into the bottom and up the sides.
  8. Pour the custard mixture into the prepared crust and smooth the top.
  9. Sprinkle pine nuts over the custard filling.
  10. Bake in the preheated oven for 25-30 minutes until the crust is golden and the custard is set.
  11. Let the tart cool before dusting with powdered sugar, if desired. Serve warm or at room temperature.
