- Coconut oil - 30 grams
- Maple syrup - 50 grams
- Unsweetened cocoa powder - 15 grams
- Plant-based milk - 50 ml
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Pinch of salt
Steps
- Preheat the oven to 180°C (350°F) and grease a small round cake pan (15 cm diameter) with coconut oil.
- In a microwave-safe bowl, combine the dark chocolate and coconut oil. Melt them together in the microwave in 20-second intervals, stirring between each until smooth.
- In a large mixing bowl, combine the almond flour, cocoa powder, baking powder, and salt. Mix well.
- In another bowl, whisk together the melted chocolate mixture, maple syrup, plant-based milk, and vanilla extract until fully combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean.
