Ingredients

  • Dark chocolate (70% cocoa) - 100g
  • Unsalted butter - 75g
  • Granulated sugar - 100g
  • Large eggs - 2
  • Almond flour - 100g
  • Vanilla extract - 1 teaspoon
  • Powdered sugar (for dusting) - to taste

Steps

  1. Preheat the oven to 180°C (350°F) and grease a 20 cm (8 inch) round cake pan.
  2. In a heatproof bowl, melt the dark chocolate and butter together over a pot of simmering water, stirring until smooth.
  3. Remove the bowl from heat and let it cool slightly.
  4. In a separate bowl, whisk together the granulated sugar and eggs until light and fluffy.
  5. Add the melted chocolate mixture and vanilla extract to the egg mixture, and mix until well combined.
  6. Gradually fold in the almond flour until the batter is smooth and homogenous.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Dust with powdered sugar before serving.
