- Almonds - 100 grams
- Honey - 75 grams
- Granulated sugar - 50 grams
- Egg whites - 2 large
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Cornstarch - for dusting
Steps
- Preheat your oven to 180°C (350°F). Spread the almonds on a baking sheet and toast them for about 10 minutes, or until golden brown and fragrant. Let them cool.
- In a saucepan over low heat, combine the honey and granulated sugar. Stir until the sugar dissolves and the mixture starts to bubble. Remove from heat.
- In a clean bowl, whip the egg whites with a pinch of salt until stiff peaks form.
- Gradually add the hot honey and sugar mixture to the whipped egg whites while continuing to beat until well combined and glossy.
- Fold in the toasted almonds and vanilla extract gently until evenly coated.
- Line a small rectangular baking dish with parchment paper and dust it with cornstarch. Pour the mixture into the dish and smooth the top with a spatula.
- Allow to cool at room temperature for at least 2 hours, or until set. Once set, cut into squares or bars and dust with additional cornstarch to prevent sticking.
