Ingredients

  • Almonds - 100 grams
  • Honey - 75 grams
  • Granulated sugar - 50 grams
  • Egg whites - 2 large
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Cornstarch - for dusting

Steps

  1. Preheat your oven to 180°C (350°F). Spread the almonds on a baking sheet and toast them for about 10 minutes, or until golden brown and fragrant. Let them cool.
  2. In a saucepan over low heat, combine the honey and granulated sugar. Stir until the sugar dissolves and the mixture starts to bubble. Remove from heat.
  3. In a clean bowl, whip the egg whites with a pinch of salt until stiff peaks form.
  4. Gradually add the hot honey and sugar mixture to the whipped egg whites while continuing to beat until well combined and glossy.
  5. Fold in the toasted almonds and vanilla extract gently until evenly coated.
  6. Line a small rectangular baking dish with parchment paper and dust it with cornstarch. Pour the mixture into the dish and smooth the top with a spatula.
  7. Allow to cool at room temperature for at least 2 hours, or until set. Once set, cut into squares or bars and dust with additional cornstarch to prevent sticking.
