- Cornstarch - 1 tablespoon (for dusting)
Steps
- Preheat your oven to 180°C (350°F) and toast the almonds and hazelnuts on a baking sheet for about 10 minutes until golden brown. Let them cool and then chop roughly.
- In a saucepan, combine the honey and granulated sugar over medium heat. Stir until the sugar is completely dissolved, then bring the mixture to a boil, cooking until it reaches a temperature of about 140°C (284°F) on a candy thermometer.
- In a separate bowl, whisk the egg whites until stiff peaks form. Slowly pour the hot honey mixture into the egg whites while continuously whisking to incorporate.
- Add the lemon zest, vanilla extract, and chopped nuts to the mixture and fold gently until everything is well combined.
- Line a small rectangular dish (approximately 15x10 cm) with parchment paper and dust it lightly with cornstarch. Pour the nougat mixture into the dish and spread it evenly.
- Let the torrone cool at room temperature for at least 4 hours or until it is set. Once set, cut it into bite-sized pieces and dust with additional cornstarch to prevent sticking.
