- Almonds - 100 grams
- Honey - 75 grams
- Sugar - 50 grams
- Water - 30 ml
- Egg whites - 1 large
- Vanilla extract - 1 teaspoon
- Cornstarch - 1 tablespoon
- Pistachios - 50 grams
Steps
- Roast the almonds and pistachios in a preheated oven at 180°C for about 10 minutes until golden, then let them cool.
- In a saucepan, combine honey, sugar, and water. Heat over medium heat until the sugar dissolves, then bring to a boil and cook until the mixture reaches 120°C (use a candy thermometer).
- While the syrup is boiling, whisk the egg whites in a clean bowl until stiff peaks form.
- Once the syrup reaches the desired temperature, slowly pour it into the egg whites while continuously whisking to combine.
- Add the vanilla extract and continue whisking until the mixture thickens and becomes glossy, about 5 minutes.
- Fold in the roasted almonds and pistachios until evenly distributed.
- Line a small rectangular dish with parchment paper and spread the nougat mixture evenly into the dish, pressing it down firmly.
- Dust the top with cornstarch and let it cool at room temperature for at least 2 hours, or until set.
- Once set, cut the torrone into small pieces and enjoy.
