- Maple syrup - 3 tablespoons
- Vanilla extract - 1 teaspoon
- Espresso or strong brewed coffee - 100 ml
- Almond milk - 50 ml
- Cocoa powder - 2 tablespoons
- Vegan ladyfingers - 10 pieces
- Dark chocolate shavings - for garnish (optional)
Steps
- Soak the raw cashews in water for at least 2 hours or overnight. Drain and rinse them before use.
- In a blender, combine the soaked cashews, coconut cream, maple syrup, and vanilla extract. Blend until smooth and creamy, scraping down the sides as needed.
- In a shallow dish, combine the espresso and almond milk. Dip each ladyfinger quickly into the coffee mixture, ensuring not to soak them too long.
- In serving glasses or a dish, layer the soaked ladyfingers at the bottom, followed by a layer of the cashew cream mixture. Repeat the layers until all ingredients are used, finishing with the cream on top.
- Refrigerate the tiramisu for at least 4 hours to allow it to set. Before serving, dust the top with cocoa powder and garnish with dark chocolate shavings if desired.
