Ingredients

  • Mascarpone cheese - 200 grams
  • Heavy cream - 100 ml
  • Instant coffee - 2 tablespoons
  • Boiling water - 100 ml
  • Almond flour - 50 grams
  • Eggs - 2 large, separated
  • Erythritol sweetener - 2 tablespoons
  • Cocoa powder - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. In a small bowl, dissolve the instant coffee in boiling water and set aside to cool.
  2. In a mixing bowl, whisk the egg whites with a pinch of salt until stiff peaks form.
  3. In another bowl, beat the egg yolks with the erythritol sweetener and vanilla extract until pale and creamy.
  4. Add the mascarpone cheese to the egg yolk mixture and mix until smooth.
  5. Gently fold the whipped egg whites into the mascarpone mixture until fully combined.
  6. In a shallow dish, pour the cooled coffee and quickly dip each almond biscuit into it, ensuring they are moistened but not soggy.
  7. Layer half of the soaked biscuits in the bottom of two serving glasses or bowls.
  8. Spoon half of the mascarpone mixture over the biscuits in each glass, smoothing it out evenly.
  9. Repeat with another layer of soaked biscuits followed by the remaining mascarpone mixture.
  10. Cover and refrigerate for at least 2 hours to set.
  11. Before serving, dust the top with cocoa powder.
