- Eggs - 2 large, separated
- Erythritol sweetener - 2 tablespoons
- Cocoa powder - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- In a small bowl, dissolve the instant coffee in boiling water and set aside to cool.
- In a mixing bowl, whisk the egg whites with a pinch of salt until stiff peaks form.
- In another bowl, beat the egg yolks with the erythritol sweetener and vanilla extract until pale and creamy.
- Add the mascarpone cheese to the egg yolk mixture and mix until smooth.
- Gently fold the whipped egg whites into the mascarpone mixture until fully combined.
- In a shallow dish, pour the cooled coffee and quickly dip each almond biscuit into it, ensuring they are moistened but not soggy.
- Layer half of the soaked biscuits in the bottom of two serving glasses or bowls.
- Spoon half of the mascarpone mixture over the biscuits in each glass, smoothing it out evenly.
- Repeat with another layer of soaked biscuits followed by the remaining mascarpone mixture.
- Cover and refrigerate for at least 2 hours to set.
- Before serving, dust the top with cocoa powder.
