  • Erythritol - 3 tablespoons
  • Instant coffee - 1 tablespoon
  • Boiling water - 30 ml
  • Almond flour - 50 grams
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Cocoa powder - 1 tablespoon for dusting
  • Unsweetened chocolate shavings - optional for garnish

Steps

  1. Dissolve the instant coffee in 30 ml of boiling water and set aside to cool.
  2. In a mixing bowl, combine the mascarpone cheese, heavy cream, erythritol, and vanilla extract. Whisk until smooth and creamy.
  3. In a separate bowl, beat the egg until frothy. Gradually fold the egg into the mascarpone mixture until well combined.
  4. Pour the cooled coffee mixture into a shallow dish. Dip each side of the almond flour biscuits briefly into the coffee, ensuring they are soaked but not soggy.
  5. Layer half of the soaked biscuits in the bottom of two serving glasses or bowls.
  6. Spread half of the mascarpone mixture over the biscuits in each glass.
  7. Repeat the layering process with the remaining soaked biscuits and mascarpone mixture.
  8. Cover and refrigerate for at least 2 hours to allow the flavors to meld.
