Ingredients

  • Mascarpone cheese - 250 grams
  • Heavy cream - 100 ml
  • Sugar - 50 grams
  • Instant coffee - 2 teaspoons
  • Hot water - 50 ml
  • Ladyfinger cookies - 12 pieces
  • Cocoa powder - 2 tablespoons
  • Vanilla extract - 1 teaspoon

Steps

  1. In a small bowl, dissolve the instant coffee in hot water and set aside to cool.
  2. In a mixing bowl, combine the mascarpone cheese, sugar, and vanilla extract. Mix until smooth and creamy.
  3. In another bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the mascarpone mixture until well combined.
  5. Dip each ladyfinger into the cooled coffee for about 1 second, ensuring they are soaked but not soggy.
  6. Layer half of the soaked ladyfingers in the bottom of a serving dish or two individual cups.
  7. Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly.
  8. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  9. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
  10. Before serving, dust the top with cocoa powder.
