- Mascarpone cheese - 250 grams
- Heavy cream - 100 ml
- Sugar - 50 grams
- Instant coffee - 2 teaspoons
- Hot water - 50 ml
- Ladyfinger cookies - 12 pieces
- Cocoa powder - 2 tablespoons
- Vanilla extract - 1 teaspoon
Steps
- In a small bowl, dissolve the instant coffee in hot water and set aside to cool.
- In a mixing bowl, combine the mascarpone cheese, sugar, and vanilla extract. Mix until smooth and creamy.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Dip each ladyfinger into the cooled coffee for about 1 second, ensuring they are soaked but not soggy.
- Layer half of the soaked ladyfingers in the bottom of a serving dish or two individual cups.
- Spread half of the mascarpone mixture over the ladyfingers, smoothing it out evenly.
- Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
- Before serving, dust the top with cocoa powder.
