- Arborio rice - 200 grams
- Chicken breast, diced - 150 grams
- Zucchini, diced - 100 grams
- Carrot, diced - 100 grams
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Tomato sauce - 200 grams
- Mozzarella cheese, shredded - 100 grams
- Parmesan cheese, grated - 30 grams
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Dried oregano - 1 teaspoon
- Fresh basil, chopped - 2 tablespoons
- Water - 500 milliliters
Steps
- Preheat the oven to 180°C (350°F).
- In a large pot, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the diced chicken breast to the pot and cook until browned.
- Stir in the diced zucchini and carrot, cooking for about 5 minutes until slightly softened.
- Pour in the tomato sauce, season with salt, black pepper, and oregano, then simmer for 10 minutes.
- In a separate pot, bring 500ml of water to a boil, add the Arborio rice, and cook for about 10 minutes until al dente. Drain the rice.
- In a large mixing bowl, combine the cooked rice, chicken and vegetable mixture, chopped basil, and half of the mozzarella cheese. Mix well.
- Transfer the mixture into a greased oven-safe baking dish, pressing it down to form an even layer.
- Top with the remaining mozzarella and sprinkle with grated Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool for 5 minutes before serving.
