Ingredients

  • Arborio rice - 200 grams
  • Chicken breast, diced - 150 grams
  • Zucchini, diced - 100 grams
  • Carrot, diced - 100 grams
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Tomato sauce - 200 grams
  • Mozzarella cheese, shredded - 100 grams
  • Parmesan cheese, grated - 30 grams
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Dried oregano - 1 teaspoon
  • Fresh basil, chopped - 2 tablespoons
  • Water - 500 milliliters

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the diced chicken breast to the pot and cook until browned.
  4. Stir in the diced zucchini and carrot, cooking for about 5 minutes until slightly softened.
  5. Pour in the tomato sauce, season with salt, black pepper, and oregano, then simmer for 10 minutes.
  6. In a separate pot, bring 500ml of water to a boil, add the Arborio rice, and cook for about 10 minutes until al dente. Drain the rice.
  7. In a large mixing bowl, combine the cooked rice, chicken and vegetable mixture, chopped basil, and half of the mozzarella cheese. Mix well.
  8. Transfer the mixture into a greased oven-safe baking dish, pressing it down to form an even layer.
  9. Top with the remaining mozzarella and sprinkle with grated Parmesan cheese.
  10. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  11. Remove from the oven and let it cool for 5 minutes before serving.
