  • Fresh basil - 10 grams, chopped
  • Parmesan cheese - 30 grams, grated
  • Balsamic vinegar - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for about 10 minutes to draw out moisture, then pat dry.
  3. Brush both sides of the eggplant slices with olive oil and place them on the grill. Cook for 4-5 minutes on each side until tender and grill marks appear.
  4. In a bowl, mix the halved cherry tomatoes, minced garlic, chopped basil, balsamic vinegar, salt, and black pepper.
  5. Once the eggplant is grilled, arrange the slices on a serving plate and top each slice with the tomato mixture.
  6. Sprinkle grated Parmesan cheese over the top and serve immediately.
