Steps
- Preheat your grill or grill pan over medium heat.
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for about 10 minutes to draw out moisture, then pat dry.
- Brush both sides of the eggplant slices with olive oil and place them on the grill. Cook for 4-5 minutes on each side until tender and grill marks appear.
- In a bowl, mix the halved cherry tomatoes, minced garlic, chopped basil, balsamic vinegar, salt, and black pepper.
- Once the eggplant is grilled, arrange the slices on a serving plate and top each slice with the tomato mixture.
- Sprinkle grated Parmesan cheese over the top and serve immediately.
