  • salt - to taste
  • black pepper - to taste
  • parsley - 1 tablespoon, finely chopped
  • egg yolk - 1 large
  • arugula - 50 grams, for serving

Steps

  1. Finely chop the beef tenderloin and place it in a medium bowl.
