Ingredients

  • Tagliatelle - 160 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Mushrooms (preferably porcini) - 150 grams, finely chopped
  • Truffle oil - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon zest - 1 teaspoon

Steps

  1. Cook the tagliatelle in a large pot of salted boiling water according to package instructions until al dente, typically about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, taking care not to burn it.
  4. Add the chopped mushrooms to the skillet and cook for about 5-7 minutes until they are tender and have released their moisture.
  5. Once the mushrooms are cooked, stir in the truffle oil, nutritional yeast, and season with salt and black pepper to taste.
  6. When the pasta is ready, reserve about 1/2 cup of the pasta cooking water, then drain the pasta and add it directly to the skillet with the mushroom mixture.
  7. Toss everything together, adding a little of the reserved pasta water if necessary to create a light sauce.
  8. Remove from heat and stir in the chopped parsley and lemon zest before serving.
