- Mushrooms (preferably porcini) - 150 grams, finely chopped
- Truffle oil - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon zest - 1 teaspoon
Steps
- Cook the tagliatelle in a large pot of salted boiling water according to package instructions until al dente, typically about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, taking care not to burn it.
- Add the chopped mushrooms to the skillet and cook for about 5-7 minutes until they are tender and have released their moisture.
- Once the mushrooms are cooked, stir in the truffle oil, nutritional yeast, and season with salt and black pepper to taste.
- When the pasta is ready, reserve about 1/2 cup of the pasta cooking water, then drain the pasta and add it directly to the skillet with the mushroom mixture.
- Toss everything together, adding a little of the reserved pasta water if necessary to create a light sauce.
- Remove from heat and stir in the chopped parsley and lemon zest before serving.
