- 2 large bell peppers (any color)
- 250 grams ground beef or turkey
- 100 grams ricotta cheese
- 50 grams grated Parmesan cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 200 grams crushed tomatoes (canned)
- 2 tablespoons olive oil
- Fresh basil leaves for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened, about 3-4 minutes.
- Add the ground beef or turkey to the skillet and cook until browned, breaking it up with a spoon, about 6-8 minutes.
- Stir in the crushed tomatoes, oregano, basil, salt, and pepper. Simmer for about 5 minutes to combine the flavors.
- Remove the skillet from the heat and mix in the ricotta and half of the grated Parmesan cheese until well incorporated.
- Stuff each bell pepper with the meat and cheese mixture, pressing down gently to pack it in.
- Place the stuffed peppers upright in a baking dish and sprinkle the remaining Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is golden and bubbling.
- Remove from the oven, garnish with fresh basil leaves, and serve hot.
