Ingredients

  • 2 large bell peppers (any color)
  • 250 grams ground beef or turkey
  • 100 grams ricotta cheese
  • 50 grams grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 200 grams crushed tomatoes (canned)
  • 2 tablespoons olive oil
  • Fresh basil leaves for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until softened, about 3-4 minutes.
  4. Add the ground beef or turkey to the skillet and cook until browned, breaking it up with a spoon, about 6-8 minutes.
  5. Stir in the crushed tomatoes, oregano, basil, salt, and pepper. Simmer for about 5 minutes to combine the flavors.
  6. Remove the skillet from the heat and mix in the ricotta and half of the grated Parmesan cheese until well incorporated.
  7. Stuff each bell pepper with the meat and cheese mixture, pressing down gently to pack it in.
  8. Place the stuffed peppers upright in a baking dish and sprinkle the remaining Parmesan cheese on top.
  9. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is golden and bubbling.
  10. Remove from the oven, garnish with fresh basil leaves, and serve hot.
