Ingredients
- 2 large bell peppers (any color) - 300g
- 250g ground turkey
- 100g cauliflower rice
- 50g shredded mozzarella cheese
- 30g grated Parmesan cheese
- 1 small onion, diced - 70g
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt - to taste
- Pepper - to taste
- 1 tablespoon olive oil
- 100g marinara sauce (sugar-free)
Steps
- Preheat the oven to 190°C (375°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them in a baking dish.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and ground turkey to the skillet. Cook until the turkey is browned and cooked through, about 7-10 minutes.
- Stir in the cauliflower rice, oregano, basil, salt, and pepper. Cook for an additional 3-4 minutes until the cauliflower is tender.
- Remove the skillet from heat and stir in the mozzarella and half of the Parmesan cheese, mixing until melted and combined.
- Spoon the turkey mixture evenly into the hollowed-out bell peppers. Pour the marinara sauce over the stuffed peppers, then sprinkle with the remaining Parmesan cheese.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes before serving.
