  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Bell pepper - 1 medium, diced
  • Canned diced tomatoes - 400 grams
  • Chicken broth - 200 milliliters
  • Red wine - 100 milliliters
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, carrot, and celery, and sauté until the vegetables are softened, about 5 minutes.
  3. Add the diced bell pepper and cook for another 3 minutes.
  4. Increase the heat to medium-high, add the chicken thighs, and brown them for about 5-7 minutes, turning occasionally.
  5. Pour in the red wine and let it simmer for 2-3 minutes to evaporate the alcohol.
  6. Stir in the canned diced tomatoes, chicken broth, oregano, basil, salt, and black pepper.
  7. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 25-30 minutes until the chicken is tender and cooked through.
  8. Garnish with fresh parsley before serving.
