- Celery - 1 stalk, diced
- Bell pepper - 1 medium, diced
- Canned diced tomatoes - 400 grams
- Chicken broth - 200 milliliters
- Red wine - 100 milliliters
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, garlic, carrot, and celery, and sauté until the vegetables are softened, about 5 minutes.
- Add the diced bell pepper and cook for another 3 minutes.
- Increase the heat to medium-high, add the chicken thighs, and brown them for about 5-7 minutes, turning occasionally.

- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 25-30 minutes until the chicken is tender and cooked through.
