- Canned diced tomatoes - 400 grams
- Beef broth - 250 ml
- Fresh rosemary - 1 sprig
- Dried thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaf - 1
- Fresh parsley - for garnish
Steps
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Increase the heat to medium-high and add the beef cubes, browning them on all sides for about 8-10 minutes.
- Pour in the red wine, scraping the bottom of the pot to deglaze and release any browned bits.
- Add the canned diced tomatoes, beef broth, rosemary, thyme, salt, pepper, and bay leaf to the pot.
- Bring the mixture to a boil, then reduce the heat to low and cover, letting it simmer for 1.5 hours until the beef is tender.
- Remove the bay leaf and rosemary sprig, and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
