- Yellow onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery stalk - 1, diced
- Red bell pepper - 1 small, diced
- Potato - 1 medium, diced
- Canned diced tomatoes - 200 grams
- Red wine - 100 ml
- Beef or vegetable broth - 300 ml
- Fresh rosemary - 1 sprig
- Fresh thyme - 1 sprig
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sauté until translucent, about 5 minutes.
- Add the lamb cubes to the pot, browning them on all sides for about 8-10 minutes.
- Stir in the diced carrot, celery, and red bell pepper. Cook for an additional 5 minutes until the vegetables begin to soften.
- Add the diced potato, canned tomatoes, red wine, broth, rosemary, and thyme. Season with salt and black pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 hours, stirring occasionally, until the lamb is tender and the flavors meld together.
