  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Yellow onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Red bell pepper - 1 small, diced
  • Potato - 1 medium, diced
  • Canned diced tomatoes - 200 grams
  • Red wine - 100 ml
  • Beef or vegetable broth - 300 ml
  • Fresh rosemary - 1 sprig
  • Fresh thyme - 1 sprig
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sauté until translucent, about 5 minutes.
  2. Add the lamb cubes to the pot, browning them on all sides for about 8-10 minutes.
  3. Stir in the diced carrot, celery, and red bell pepper. Cook for an additional 5 minutes until the vegetables begin to soften.
  4. Add the diced potato, canned tomatoes, red wine, broth, rosemary, and thyme. Season with salt and black pepper to taste.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 hours, stirring occasionally, until the lamb is tender and the flavors meld together.
  6. Taste and adjust seasoning if necessary before serving.
