- Pork shank - 1 kg
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Fresh rosemary - 2 sprigs, chopped
- Fresh thyme - 2 sprigs, chopped
- Salt - 1 teaspoon
- Black pepper - 1 teaspoon
- Carrots - 2 medium, diced
- Onion - 1 large, chopped
- Celery - 1 stalk, chopped
- White wine - 200 ml
- Chicken broth - 300 ml
Steps
- Preheat the oven to 160°C (320°F).
- In a large bowl, mix the minced garlic, chopped rosemary, thyme, salt, and black pepper with olive oil to create a marinade.
- Rub the marinade all over the pork shank and let it marinate for at least 30 minutes at room temperature.
- In a large oven-safe pot, heat a little olive oil over medium heat and brown the pork shank on all sides.
- Remove the pork shank and set aside. In the same pot, add diced carrots, chopped onion, and celery, sautéing until softened.
- Return the pork shank to the pot, pour in the white wine, and allow it to simmer for about 5 minutes.
- Add the chicken broth, cover the pot with a lid, and transfer it to the preheated oven.
- Roast for approximately 2.5 hours, basting the pork shank with the cooking liquid every 30 minutes, until the meat is tender and falling off the bone.
- Once cooked, remove from the oven, let it rest for 10 minutes before slicing, and serve with the pan juices.
