Ingredients

  • Pork shank - 1 kg
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 2 sprigs, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Carrots - 2 medium, diced
  • Onion - 1 large, chopped
  • Celery - 1 stalk, chopped
  • White wine - 200 ml
  • Chicken broth - 300 ml

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a large bowl, mix the minced garlic, chopped rosemary, thyme, salt, and black pepper with olive oil to create a marinade.
  3. Rub the marinade all over the pork shank and let it marinate for at least 30 minutes at room temperature.
  4. In a large oven-safe pot, heat a little olive oil over medium heat and brown the pork shank on all sides.
  5. Remove the pork shank and set aside. In the same pot, add diced carrots, chopped onion, and celery, sautéing until softened.
  6. Return the pork shank to the pot, pour in the white wine, and allow it to simmer for about 5 minutes.
  7. Add the chicken broth, cover the pot with a lid, and transfer it to the preheated oven.
  8. Roast for approximately 2.5 hours, basting the pork shank with the cooking liquid every 30 minutes, until the meat is tender and falling off the bone.
  9. Once cooked, remove from the oven, let it rest for 10 minutes before slicing, and serve with the pan juices.
