Ingredients

  • Zucchini - 2 medium
  • Yellow squash - 1 medium
  • Cherry tomatoes - 200 grams
  • Fresh mozzarella balls (bocconcini) - 150 grams
  • Fresh basil leaves - 20 grams
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Using a spiralizer, create noodles from the zucchini and yellow squash. If you don't have a spiralizer, you can use a vegetable peeler to make thin strips.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the squash noodles and sauté for about 5-7 minutes, until just tender. Season with salt and pepper to taste.
  3. While the noodles are cooking, halve the cherry tomatoes and the mozzarella balls.
  4. Once the squash noodles are cooked, remove them from the skillet and transfer to serving plates.
  5. In a bowl, toss the halved cherry tomatoes and mozzarella with the remaining olive oil, balsamic vinegar, and fresh basil leaves.
  6. Spoon the tomato and mozzarella mixture over the squash noodles, ensuring an even distribution. Adjust seasoning if necessary.
  7. Serve immediately, garnished with additional basil leaves if desired.
