- Zucchini - 2 medium
- Yellow squash - 1 medium
- Cherry tomatoes - 200 grams
- Fresh mozzarella balls (bocconcini) - 150 grams
- Fresh basil leaves - 20 grams
- Extra virgin olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Using a spiralizer, create noodles from the zucchini and yellow squash. If you don't have a spiralizer, you can use a vegetable peeler to make thin strips.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the squash noodles and sauté for about 5-7 minutes, until just tender. Season with salt and pepper to taste.
- While the noodles are cooking, halve the cherry tomatoes and the mozzarella balls.
- Once the squash noodles are cooked, remove them from the skillet and transfer to serving plates.
- In a bowl, toss the halved cherry tomatoes and mozzarella with the remaining olive oil, balsamic vinegar, and fresh basil leaves.
- Spoon the tomato and mozzarella mixture over the squash noodles, ensuring an even distribution. Adjust seasoning if necessary.
