- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 200 grams
- Zucchini - 1 medium, sliced into rounds
- Bell pepper - 1 medium, cut into squares
- Skewers - 4 (if wooden, soaked in water for 30 minutes)
Steps
- Cut the chicken breast into 2.5 cm cubes and place them in a mixing bowl.
- In a separate bowl, combine olive oil, minced garlic, lemon juice, chopped rosemary, chopped thyme, salt, and black pepper to create the marinade.
- Pour the marinade over the chicken cubes, toss to coat well, and let it marinate for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables by cutting the cherry tomatoes in half, slicing the zucchini into rounds, and cutting the bell pepper into squares.
- After marinating, thread the chicken cubes onto the skewers, alternating with cherry tomatoes, zucchini, and bell pepper pieces.
- Preheat the grill or BBQ to medium-high heat.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
