  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 200 grams
  • Zucchini - 1 medium, sliced into rounds
  • Bell pepper - 1 medium, cut into squares
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. Cut the chicken breast into 2.5 cm cubes and place them in a mixing bowl.
  2. In a separate bowl, combine olive oil, minced garlic, lemon juice, chopped rosemary, chopped thyme, salt, and black pepper to create the marinade.
  3. Pour the marinade over the chicken cubes, toss to coat well, and let it marinate for at least 15 minutes.
  4. While the chicken is marinating, prepare the vegetables by cutting the cherry tomatoes in half, slicing the zucchini into rounds, and cutting the bell pepper into squares.
  5. After marinating, thread the chicken cubes onto the skewers, alternating with cherry tomatoes, zucchini, and bell pepper pieces.
  6. Preheat the grill or BBQ to medium-high heat.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  8. Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
