- Cherry tomatoes - 200 grams
- Zucchini - 1 medium, sliced

- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- In a bowl, combine the olive oil, minced garlic, lemon juice, salt, black pepper, and chopped parsley to create a marinade.
- Add the shrimp to the marinade and toss to coat. Allow to marinate for 15 minutes.
- While the shrimp marinates, prepare the vegetables by cutting the zucchini into half-moon slices and washing the cherry tomatoes.
- Thread the marinated shrimp, cherry tomatoes, and zucchini slices onto the soaked wooden skewers, alternating between the ingredients.
- Preheat the grill or BBQ to medium-high heat.
- Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the shrimp are pink and cooked through.
- Remove from the grill and serve immediately, garnished with additional chopped parsley if desired.
