  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. In a bowl, combine the olive oil, minced garlic, lemon juice, salt, black pepper, and chopped parsley to create a marinade.
  2. Add the shrimp to the marinade and toss to coat. Allow to marinate for 15 minutes.
  3. While the shrimp marinates, prepare the vegetables by cutting the zucchini into half-moon slices and washing the cherry tomatoes.
  4. Thread the marinated shrimp, cherry tomatoes, and zucchini slices onto the soaked wooden skewers, alternating between the ingredients.
  5. Preheat the grill or BBQ to medium-high heat.
  6. Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the shrimp are pink and cooked through.
  7. Remove from the grill and serve immediately, garnished with additional chopped parsley if desired.
