  • Canned diced tomatoes - 400 grams
  • Chicken broth - 250 ml
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh basil - a handful, chopped
  • Parmesan cheese - for serving (optional)

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced carrot, celery, and bell pepper, cooking for another 5 minutes until softened.
  4. Add the chicken thighs to the pot, browning them on all sides for about 8-10 minutes.
  5. Stir in the canned diced tomatoes, chicken broth, dried oregano, salt, and black pepper.
  6. Bring to a simmer, then cover and reduce heat to low, cooking for 25-30 minutes until the chicken is tender.
  7. Remove the chicken, shred it using two forks, and return it to the pot.
  8. Stir in the chopped fresh basil and cook for an additional 5 minutes.
  9. Serve hot, optionally topped with grated Parmesan cheese.
