- Canned diced tomatoes - 400 grams
- Chicken broth - 250 ml
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh basil - a handful, chopped
- Parmesan cheese - for serving (optional)
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, celery, and bell pepper, cooking for another 5 minutes until softened.
- Add the chicken thighs to the pot, browning them on all sides for about 8-10 minutes.
- Stir in the canned diced tomatoes, chicken broth, dried oregano, salt, and black pepper.
- Bring to a simmer, then cover and reduce heat to low, cooking for 25-30 minutes until the chicken is tender.
- Remove the chicken, shred it using two forks, and return it to the pot.
- Stir in the chopped fresh basil and cook for an additional 5 minutes.
- Serve hot, optionally topped with grated Parmesan cheese.
