- Cherry tomatoes - 200 grams, halved
- Fresh basil leaves - 20 grams, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil. Add the whole grain rice spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for about 5-7 minutes, stirring occasionally, until they start to soften and release their juices.
- Once the spaghetti is cooked, reserve 1/2 cup of the pasta water and drain the rest. Add the spaghetti to the skillet with the tomatoes.
- Toss the spaghetti in the sauce, adding reserved pasta water a little at a time to achieve your desired sauce consistency. Stir in the chopped basil, salt, and black pepper to taste.
- Serve immediately, topped with grated Parmesan cheese and additional fresh basil if desired.
