  • Fresh basil leaves - 20 grams, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the whole grain rice spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for about 5-7 minutes, stirring occasionally, until they start to soften and release their juices.
  4. Once the spaghetti is cooked, reserve 1/2 cup of the pasta water and drain the rest. Add the spaghetti to the skillet with the tomatoes.
  5. Toss the spaghetti in the sauce, adding reserved pasta water a little at a time to achieve your desired sauce consistency. Stir in the chopped basil, salt, and black pepper to taste.
  6. Serve immediately, topped with grated Parmesan cheese and additional fresh basil if desired.
