  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 leaves
  • Parmesan cheese - 30 grams (grated)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. While the spaghetti is cooking, wash the zucchini and slice them into thin rounds or half-moons.
  3. Peel and thinly slice the garlic cloves.
  4. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté for about 1 minute until fragrant but not browned.
  5. Add the sliced zucchini to the skillet, season with salt and pepper, and cook for about 5-7 minutes, stirring occasionally, until the zucchini is tender.
  6. Once the spaghetti is cooked, reserve a cup of pasta water and drain the rest.
  7. Add the drained spaghetti to the skillet with the zucchini. Toss to combine, adding a bit of reserved pasta water if needed to create a light sauce.
  8. Remove from heat, stir in the fresh basil and grated Parmesan cheese. Adjust seasoning with more salt and pepper if needed.
  9. Serve immediately, garnished with additional Parmesan and fresh basil if desired.
