Ingredients

  • spaghetti - 200 grams
  • sea urchin roe (ricci di mare) - 100 grams
  • extra virgin olive oil - 4 tablespoons
  • garlic - 2 cloves, minced
  • chili flakes - 1/2 teaspoon
  • lemon juice - 1 tablespoon
  • fresh parsley - 2 tablespoons, chopped
  • salt - to taste
  • black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the spaghetti is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and chili flakes to the skillet, sautéing for about 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Once the spaghetti is cooked, reserve 1/2 cup of pasta water and drain the rest.
  5. Add the cooked spaghetti to the skillet, along with the sea urchin roe and lemon juice, tossing to combine.
  6. If the mixture is too dry, add reserved pasta water a little at a time until you reach the desired consistency.
  7. Season with salt and black pepper to taste, and stir in the chopped parsley.
  8. Serve immediately, garnished with additional parsley if desired.
