Steps

  1. Rinse the mussels under cold water and remove any beards or debris.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant.
  3. Add the halved cherry tomatoes and red pepper flakes to the skillet, cooking for about 5 minutes until the tomatoes start to soften.

  5. Add the cleaned mussels to the skillet, cover with a lid, and cook for about 5-7 minutes or until the mussels open up.

  7. Once the mussels are cooked, add the zucchini noodles to the skillet and toss everything together for about 2-3 minutes until the noodles are tender but still firm.
