- Spaghetti - 200 grams
- Fresh shrimp (peeled and deveined) - 250 grams
- Garlic (minced) - 3 cloves
- Red chili flakes - 1 teaspoon
- Extra virgin olive oil - 4 tablespoons
- Cherry tomatoes (halved) - 150 grams
- Fresh parsley (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Lemon (juiced) - 1
Steps
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and red chili flakes, sautéing for 1-2 minutes until fragrant.
- Add the shrimp to the skillet, cooking for about 3-4 minutes until they turn pink and opaque.
- Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they start to soften.
- Once the spaghetti is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
- Add the drained spaghetti to the skillet with the shrimp and tomatoes. Toss everything together, adding reserved pasta water as needed to create a light sauce.
- Season with salt, black pepper, and lemon juice. Remove from heat and stir in chopped parsley.
- Serve immediately, garnished with extra parsley if desired.
