Ingredients

  • Spaghetti - 200 grams
  • Fresh shrimp (peeled and deveined) - 250 grams
  • Garlic (minced) - 3 cloves
  • Red chili flakes - 1 teaspoon
  • Extra virgin olive oil - 4 tablespoons
  • Cherry tomatoes (halved) - 150 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Lemon (juiced) - 1

Steps

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and red chili flakes, sautéing for 1-2 minutes until fragrant.
  3. Add the shrimp to the skillet, cooking for about 3-4 minutes until they turn pink and opaque.
  4. Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they start to soften.
  5. Once the spaghetti is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
  6. Add the drained spaghetti to the skillet with the shrimp and tomatoes. Toss everything together, adding reserved pasta water as needed to create a light sauce.
  7. Season with salt, black pepper, and lemon juice. Remove from heat and stir in chopped parsley.
  8. Serve immediately, garnished with extra parsley if desired.
