- Spaghetti - 160 grams
- Bottarga (grated) - 30 grams
- Extra virgin olive oil - 4 tablespoons
- Garlic (thinly sliced) - 2 cloves
- Red pepper flakes - 1/4 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
- Lemon (zested and juiced) - 1
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and red pepper flakes, sautéing until the garlic is golden and fragrant, about 2-3 minutes.
- Once the spaghetti is cooked, reserve 1/2 cup of the pasta water and drain the rest.
- Add the drained spaghetti to the skillet with the garlic oil. Toss to combine, then add the reserved pasta water a little at a time until the desired consistency is reached.
- Stir in the grated bottarga, lemon zest, and lemon juice. Toss well to combine, and season with salt and black pepper to taste.
- Remove from heat and garnish with chopped parsley before serving.
