Ingredients

  • Spaghetti - 160 grams
  • Bottarga (grated) - 30 grams
  • Extra virgin olive oil - 4 tablespoons
  • Garlic (thinly sliced) - 2 cloves
  • Red pepper flakes - 1/4 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon (zested and juiced) - 1
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and red pepper flakes, sautéing until the garlic is golden and fragrant, about 2-3 minutes.
  3. Once the spaghetti is cooked, reserve 1/2 cup of the pasta water and drain the rest.
  4. Add the drained spaghetti to the skillet with the garlic oil. Toss to combine, then add the reserved pasta water a little at a time until the desired consistency is reached.
  5. Stir in the grated bottarga, lemon zest, and lemon juice. Toss well to combine, and season with salt and black pepper to taste.
  6. Remove from heat and garnish with chopped parsley before serving.
