  • Lemon - 1, zested and juiced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and add the spaghetti. Cook according to the package instructions until al dente, approximately 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 2-3 minutes, being careful not to burn it.
  3. Add the red pepper flakes (if using) to the skillet and stir for an additional 30 seconds.
  4. Once the spaghetti is cooked, reserve 1/2 cup of the pasta water, then drain the spaghetti.
  5. Add the drained spaghetti directly to the skillet with the garlic oil. Toss to combine.
  6. Pour in the lemon juice and add the lemon zest, mixing well. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  7. Season with salt and black pepper to taste. Stir in the chopped parsley just before serving.
  8. Divide the spaghetti between two plates and finish with an extra drizzle of olive oil if desired.
