- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and add the spaghetti. Cook according to the package instructions until al dente, approximately 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 2-3 minutes, being careful not to burn it.
- Add the red pepper flakes (if using) to the skillet and stir for an additional 30 seconds.
- Once the spaghetti is cooked, reserve 1/2 cup of the pasta water, then drain the spaghetti.
- Add the drained spaghetti directly to the skillet with the garlic oil. Toss to combine.
- Pour in the lemon juice and add the lemon zest, mixing well. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
- Season with salt and black pepper to taste. Stir in the chopped parsley just before serving.
- Divide the spaghetti between two plates and finish with an extra drizzle of olive oil if desired.
